This is my first solo kitchen gig and my reputation and career are on the line! We work with meat that is grass fed and local. We’re in Idaho and it’s completely do-able. I want steaks full of marble. . . tender and delicious- my teachers taught me that you can’t paint pink with black- so we cook with mostly organic, but always natural ingredients.
Chef Jeremy was hand picked by well known and respected Chef Angelo the owner of Angelo’s Ristorante in down town Coeur d’Alene. This is the very thing Angelo is known for. . . Grass fed, local and sustainable are three words Angelo has been preaching for 13 years.
